I have a confession to make, I have been making this vanilla cinnamon sweet potato breakfast bowl for Dave for over 2 years. We actually started making this sweet potato breakfast bowl recipe when Dave was avoiding all grains, including oats! Dave consumes A TON of calories and cutting out oats was leaving him a big void to fill. And he quickly got tired of savory breakfast items every day. This vanilla cinnamon sweet potato breakfast bowl became one of his favorite breakfasts and post workout meals!

Why you’ll love this Sweet Potato Breakfast Bowl

This sweet potato breakfast bowl is simple enough to construct, even when you are having a busy morning! I actually like to roast up a few extra sweet potatoes on Sunday nights when the oven is already hot. I just store them in the fridge and use them for recipes like this or in my apple sweet potato hash or sweet potato protein bites (another good one)! But if you don’t have a roasted sweet potato on hand, you can just microwave up a sweet potato for 4-5 minutes and use that instead.

Once the sweet potatoes are cooked, you can easily peel the skin away from them. Once the skin is removed, just mash the sweet potato with a fork, add the milk and protein and stir well. Add in a tablespoon of your favorite nut or seed butter and stir well. Add a little cinnamon and vanilla extract to make it extra decadent and amazing!

If you are paleo and don’t want to use the vegan protein powder, you can also use a paleo protein, you just may want to reduce the milk so it’s not too runny!

  • Microwave the sweet potato for 5 minutes (prick a few holes in the skin so it doesn’t explode). Be sure it’s cooked all the way through.
  • Peel the skin from the sweet potato. It should come off easily with your fingers.
  • Mash the sweet potato with your fork. Add the remaining ingredients and stir well. Serve hot or cold

    I always liked sweet breakfasts, with the addition of honey or dried fruits, I don’t really like salty ones. Before, I didn’t think that such an interesting breakfast option could be made from potatoes, with vanilla and cinnamon added, I would definitely have to try.
