Dave and I almost fought over the first batch of these that we made. I had grand plans to try these Spiced Sunflower Seeds on everything, over yogurt like granola, sprinkled over baked sweet potatoes with coconut butter and cinnamon and even on a fall inspired salad. Dave wasn’t having any of these though, he just wanted to eat them by the handful! Luckily one thing we seem to always have on hand is sunflower seeds, so I told Dave to eat his heart out. But I have to be completely honest with you guys, eating these by the handful has to be my favorite way to enjoy them as well.
Spiced Sunflower Seeds Recipe Tips
This is one of those recipes that if you don’t tell people it’s healthy, they will never figure it out. But these are full of minerals and vitamin love. Even the maple syrup has some added nutritional benefit.
Sunflower seeds are full of magnesium and copper, which are minerals that help keep your bones strong. Sunflower seeds are also full of Vitamin E, which can help combat skin damage from the sun. Vitamin E protects cells against free radicals, and also help make red blood cells which help bring oxygen to your tissues! Sunflower seeds are rich in monounsaturated and polyunsaturated fats as well, which are the healthy fats that help lower high blood cholesterol (LDL).
Maple syrup helps naturally sweetened these pumpkin spice maple sunflower seeds. Maple syrup is full of manganese, which is necessary for brain and nerve function. It’s also full of zinc, which helps keep your immune system up! Perfect for this time of year when colds and the flu start making its way around. Maple syrup also contains magnesium, calcium and potassium, which is great for muscle recovery and keeping your bones strong!

Pumpkin Spice Maple Sunflower Seeds
- Preheat oven to 400 F.
- In a bowl, combine the maple syrup, pumpkin spice, ground cinnamon, melted coconut oil and pinch of salt. .
- Add 1 cup of sunflower seeds and stir well.
- Place foil on the baking sheet and spray lightly with coconut oil.
- Add the sunflower seeds and spread out into a thin layer.
- Bake for 5 minutes.
- Allow to cool completely before enjoying!
