What is a tostada?
Tostada is essentially a crispy flat taco! Instead of folding the tortilla up into a taco shell, the tortilla is either fried to baked flat and topped with toppings after crispy. Usually tostadas are made with corn tortillas.

- Sweet corn salsa
- Smoky cumin
- Sriracha
- Fresh lime juice
- Avocado
- Shredded red cabbage
How to make homemade refried beans?
You can make homemade refried beans with organic canned black beans or dark kidney beans.
Start by draining any liquid from the can and rinsing the beans. Once rinsed, mash the cooked beans up with a fork after washing and draining them from the can.
Add salt and cumin to the mashed beans for a simple but filling topping for these tostadas.
These “refried beans” are ready in under 3 minutes, mashing and all! The creamy texture of the beans against the crunchy corn tortilla and the crunchy sweet corn is the perfect blend of flavors and textures.

Easy Bean Tostadas
Ingredients
- 6 corn tortillas - I use Trader Joe’s
- 1 can organic black beans or dark kidney beans - drained, rinced and smashed
- 11/2 tsp. ground cumin
- 1/4 tsp sea salt
- simple corn homemade salsa
- 1/2 cup chopped romaine lettuce
- 1/4 cup chopped red cabbage - optional
- avocado
- sriracha to taste
Instructions
- Place corn tortillas in an oven set to 350. I use my counter top toaster oven. Bake for 10 minute until crispy
- While corn tortillas are baking, drain and rinse the beans. After allowing them to soak, rinse and mash with a fork. Add cumin and salt and mix to combine. Microwave for 1 minute (or heat on stove)
- Prepare simple corn homemade salsa if not already made.
- Once tortillas are crispy, remove from the oven. Add refried beans, romaine, red cabbage, corn salsa and top with sriracha

Tostadas are my go to for leftovers, so I love this recipe. I love the idea for baking the shells in the oven. I usually fry them but this healthier option rocks!
