  • Sweet potatoes – all you need for this recipe are sweet potatoes. Since you are using the sweet potato to replace bread, I like to buy large, thick sweet potatoes so they can get sliced into large slices that would resemble bread.

How to make sweet potato toast in the air fryer

Start by slicing the sweet potatoes – first slice off the ends so that you have a flat bottom you can rest the potato on. Then using a very sharp knife slowly cut the potato into ¼ – ½ inch slices. If you take your time you can easily cut the potato slices into the same thickness from top to bottom.

Once you have your slices of sweet potato, place them in the air fryer basket. My air fryer will allow me to put 3 large slices at a time (try to not let the sweet potato slices overlap too much or they will not cook properly).

Turn the air fryer on 360F for 16 minutes. Pause the air fryer half way through and flip the sweet potato slices.

If you need to make a second batch, the air fryer will be preheated so you will only need to cook the sweet potato slices 14-15 minutes for the next batch.

Put the slices of sweet potato in the toaster and toast (light to medium toasting) for 3-4 cycles. Be careful when removing the sweet potato slices from the toaster as they are fragile and delicate.

Note: Using the toaster can be time consuming, which is why I love using the air fryer instead.

How to make sweet potato toast in the oven

Preheat the oven to 450F. Once oven is preheated, place sweet potato slices on a baking sheet (lined with parchment for easy clean up) and bake for 20 minutes. After 20 minutes, take out of the oven and flip the sweet potato slices. Return to the oven for 10-15 more minutes.

What are the best sweet potatoes for making sweet potato toast?

It is best to use large (tall and thick) potatoes so that you can get a few large slices of toast from each sweet potato. The thicker the potato, the wider the toast and the taller the potato, the longer the toast. If I had to choose, I would choose thick sweet potatoes over long sweet potatoes so that the topping will be easy to fit on once toasted.

You can use traditional orange sweet potatoes, yams or other sweet potatoes (purple or Japanese which are purple on the outside and white on the inside).

Can you freeze sweet potato toast?

Yes you can freeze sweet potato toast to use later. Cook the sweet potatoes then let them cool completely. Once cooled, transfer the sweet potato toast to a baking sheet lined with parchment paper. Let freeze overnight. Once frozen, transfer to a freezer safe bag or container for up to 2 months with parchment paper between the slices (to ensure they don’t stick together).

To me this makes sweet potato toast a healthy option for sure. Depending on how you choose to top your sweet potato toast could impact how healthy it is.

Storing leftovers

Fridge: Store leftover sweet potato toast in the fridge for up to 4 days. Reheat in the air fryer 3-4 minutes at 375F or in a hot skillet for 2-3 minutes per side.

Freezer: Freeze leftover sweet potato toast on a flat surface (baking sheet lined with parchment paper) until frozen. Can be frozen up to 2 months. Once frozen, transfer to a freezer safe bag or container with parchment paper between the slices (to ensure they don’t stick together). Reheat in the air fryer 375F for 15 minutes.

Substitutions

Sweet Potato – you can also make toast with large Idaho potatoes; however you will need to soak the potato slices in cold water for 10-15 minutes before drying them and cooking them in the air fryer. I recommend spraying Idaho potatoes with avocado oil or olive oil spray to ensure they get crispy.  Tip: Soaking the potatoes in cold water helps to remove the excess starch so they will get extra crispy in the air fryer – this step is not needed for sweet potatoes!
