Greek salad with Homemade Greek Dressing is such an easy salad to throw together and enjoy with just a few kitchen staples. This Greek salad is a great way to start a meal, or it can easily become the main attraction. The chunks of feta cheese in the dressing makes it something special and irresistible.
As a longtime vegetarian, Greeks salad have always been one of those go to salads on the menu if I got out to eat that I can enjoy without feeling like I was being cut short on flavor. Most of the other salads on restaurant menus have the star ingredient as meat, with the seasoning coming from things like bacon or the chef salad with ham and turkey. I of course would order my salad without those items, and I could always tell there was something missing.
But Greek salads always delivers! The tangy salty feta cheese mixed with the Greek spices in the dressing and those pepperonchini are just the right bite of spice. What I also love about Greek salads is that it would often come topped with chickpeas; which is of course one of my favorite vegetarian protein sources.

As I’ve mentioned before, I try to make as much of my own food as possible. Especially things like salad dressing. I have no idea why there has to be 15-25 ingredients on the back of a salad dressing bottle – most of them I can’t pronounce. Not exactly healthy food! Honestly making your own salad dressing could not be easier! And it’s much less expensive! With the right tools (a mason jar) you can shake your own dressing in 1 minute flat!
I don’t love olives, but if you do, feel free to add them to this recipe as well! I don’t think it’s a Greek salad without the pepperonchini or the feta dressing though, those two ingredients really make this salad special to me. Now that I eat fish occasionally, I have made this salad with grilled shrimp and salmon. It’s insanely good! Just use the dressing recipe without the feta cheese as a marinade and it will come out perfectly for you!
Homemade Greek Dressing
- 1 head of romaine - washed and chopped
- 1/4 English cucumber - sliced thin
- 1/4 red pepper chopped
- 1/4 yellow pepper chopped
- 6-10 cherry tomatoes - chopped
- 3-4 pepperoncini peppers - chopped
- 1/2 cup chickpeas - drained and washed
For the salad, chop all the ingredients and add them to a salad bowl.
- In a mason jar with a tight fitting lid, add dressing ingredients and tightly screw on the lid. Shake vigorously for 1 minute until dressing comes together.
