If you haven’t made a mug cake before, I have to warn you, they are so easy and packed with flavor! After all who doesn’t love having cake ready in 2 minutes? I have to admit, I have an insane sweet tooth, which is why I constantly create protein packed snacks to indulge my sweet tooth with healthier versions of my childhood favorites like gingerbread cookies!

What I love about this gingerbread mug cake is that it’s not only so flavorful but it’s also packed with protein. The reason that is important is because protein is so satisfying and can actually help you feel full vs. normal cake that usually just makes you want more cake!

The base of this gingerbread mug cake is banana, just like my chocolate mug cake! Make sure you have an organic quality molasses and fresh ginger to make that gingerbread flavor! I have to be honest with you, I cannot stand when recipes only call for like ¼ tsp. of cinnamon and a pinch of ginger! I need to taste the spices!

As I mentioned in my chocolate mug cake recipe, I use vegan protein powder. Please note that every microwave is different and the type of protein powder you use might also be different. Remember, not all microwaves are the same, so start with 1:30 seconds and you can always add 10-15 seconds of time if you haven’t achieved the right “doneness”.

Also I have not tested this recipe for whey protein, so I highly encourage you to grab a vegan protein powder for baking; you know you are going to be addicted to this gingerbread mug cake.
