It’s pretty much been my newest obsession and I am not even going to apologize. Except to my friends that live nearby that can’t seem to get their hands on Trader Joe’s riced cauliflower because I’m the one stealing it all :) I have been on the cauliflower rice bandwagon for some time and I dabbled in cauliflower oatmeal a few times but couldn’t nail down a recipe I loved. That’s until I made this apple cinnamon caulioat recipe. Even Dave loves this and he is a hard cord oatmeal fan!
My mornings have been a bit crazy lately. Well to be honest my entire day is a cluster still. But it’s being worked on and Dave and I are hoping to expand the business so that we have our own private prepping area, which will help reduce some of the chaos in our lives right now when preparing meals for The Healthy Dish Company. We have been growing (YES YES YES) and we will soon be servicing 2 new gyms. We are looking to expand into one or two more gyms this year and then I believe we will be at our max. So exciting and scary.

So what does this have to do with Apple Cinnamon Cauliflower Oatmeal ? Well we have been working crazy hours and by the time I get up I need veggies but also crave something sweet and satisfying. We end up buying a ton of cauliflower for our recipes (hello low carb lasagna I’m looking at you) and I often have some extra cauliflower rice to bring home with me after cooking all night. And after a night of cooking the last thing I’ve been wanting to do first thing in the morning is cook more. That’s why this recipe was invented!
Growing up I loved those packets of apple cinnamon oatmeal. You know what I’m talking about with the dehydrated apples and brown sugar/cinnamon. Yes they were the best, especially on Saturday mornings. I remember that was one of the meals I could prepare on my own without needing a ton of help from my mom. And it always tasted SO GOOD! This oatmeal was inspired by those memories. I quickly grated a fuji apple, threw some leftover cooked cauliflower rice and stirred all these ingredients up with some Vanilla Vega One Performance Protein powder (my personal favorite lately), some cinnamon and coconut milk because well it has to be creamy and dreamy right? The end result – nothing short of amazing!! I’ve made this so many times now and always forget to grab a picture for the blog so I could share the recipe with you.

I did not know that Trader Joe’s carried cauliflower rice until you mentioned it! I did see, by the way, that yesterday, Today featured a post comparing homemade cauliflower rice to TJ’s frozen and refrigerated versions. The frozen version from TJ’s won! See the post here: http://www.today.com/food/trader-joe-s-cauliflower-rice-better-homemade-we-put-it-t89001 Thanks so much, and I can’t wait to try this!

So this is not meant to serve hot? Is it better lukewarm, room temp or chilled? Very excited to give this a try!
Samantha Rowland
You can certainly eat it hot if you would like, however the texture is best when it’s lukewarm. The protein powder just mixes better when the cauliflower has had 5 minutes or so to cool down before stirring it in. If you use cold milk from the fridge that usually offsets the heat from the cauliflower!
Rebecca @ Strength and Sunshine
If that didn;t have the potential to kill my stomach I would totally dig a bowl!
