Get your mint chocolate brownie fix with these single serve protein mint chocolate brownies anytime! These mint chocolate brownies are gluten free, low carb, vegan, protein packed and ready in 2 minutes! Even better, these brownies have 5 servings of veggies in them thanks to a secret ingredient!
I have a confession! I can’t go more than a day or two without chocolate! Please tell me I’m not alone in this obsession! And brownies are my favorite way to indulge in this chocolate obsession! But I know myself well enough that I can’t make a batch of brownies without having somewhere to take them to. Otherwise I find myself in the kitchen with every excuse, eating brownies until the pan is gone and my stomach hurts.
So instead of trying to white knuckle my way out of my brownie obsession, I make single serve brownies like these chocolate mint brownies or single serve peanut butter brownies (which I highly recommend you try as well). These chocolate mint brownies would be delicious any time of the year, but especially in winter when you want to get all cozy on the couch with a hot chocolate and a brownie watching Christmas movies and reminiscing about being a kid.
Oh remember how I promised you 5 servings of veggies in your brownie? Well that’s thanks to Amazing Grass Chocolate Peppermint Greens. I added a scoop to this single serve mint chocolate brownie recipe because they are amazing and also an easy way to sneak in more veggies in your day!
I recommend Amazing Grass greens to all of my clients. They are a simple way to make sure you are getting a ton of nutrition into your body everyday, no matter what comes up in the day for you! And these peppermint chocolate greens happen to taste like my favorite peppermint hot chocolate when mixed in coconut milk, so I have no problem getting my greens in this time of year! This is a seasonal product though, so make sure you order a few now, so you have them on hand all winter long (assuming I don’t buy out the entire stock).
Also what makes this recipe high in protein is the vegan protein powder I use! I love to use Vega Performance Protein each scoop is 30 grams of protein. Be sure if you are using a different brand that you get 44g of protein powder (which is usually about 1 1/2 scoops of other brands). This will make sure you get the right consistency. Whey protein will not work in this recipe, so don’t try to substitute it.
All you need to make this recipe is your microwave. Simply mix the ingredients, divide them between two ramekins and pop them in the microwave for 2 minutes! I like to top mine with SoDelicious Brand Coco Whip when I really want to indulge! Chocolate chips on top are optional, but I highly recommend just a few! And the best news is that you can either share this recipe with a loved one, save it for tomorrow or make this recipe in one big ramekin and enjoy it all in one sitting!
