Easy Air Fryer Roasted Tomatoes
Back in 2010, I started roasting roma tomatoes in the oven, and they were always a hit. They had a savory, pizza-like taste everyone loved, and I was constantly asked for the recipe. These days I’m all about saving time, that’s why I started making roasted tomatoes in the air fryer. In just 11 minutes, you get that same rich, roasted flavor, no oven required.
These air fryer tomatoes are a quick, easy, and flavorful side dish ready in just 11 minutes with minimal cleanup. They turn out juicy with a slightly charred, smoky exterior and pair perfectly with eggs, sandwiches, salads, pasta, or even on their own as a snack. Best of all, they’re completely hands-off—just set the air fryer and let it do the work, making them ideal for busy weeknights.

What are the best tomatoes to use
- Roma tomatoes: roma tomatoes are my favorite for this recipe, they have less seeds and the best texture when roasted.
- Grape/cherry tomatoes: These turn out like burst tomatoes after roasting. There is no need to cut these tomatoes, they will burst slightly as they cook.
- Campari tomatoes: These smaller round tomatoes sometimes have more seeds than romas but are very similar in size. You can cut these into quarters (just like romas) and cook them the same way.
- Large slicing tomatoes (beefsteak, heirloom tomatoes): Anything much larger than a roma tomato should be cut into thick slices (about ½ inch thick) vs. into quarters. This way the tomatoes will cook through and get caramelized without being too soggy in the center.
Air Fryer Tomatoes Recipe
Ingredients
- 4 medium tomatoes
- avocado oil or extra virgin olive oil spray
- 3/4 teaspoon Italian seasoning
- 1/4 teaspoon sea salt
- 1/4 teaspoon garlic powder
Instructions
- Cut the tomatoes in quarters but first cutting them in half lengthwise then cutting them in half again lengthwise. Add the tomatoes to the air fryer skin side down.4 medium tomatoes

- Cook in the air fryer at 390F for 11 minutes.
- Serve hot. You may need to sprinkle with salt.

- You could use dried herbs de provence in place of the Italian seasoning
- Add ¼ tsp. dried oregano for a strong Greek vibe
- Top with fresh basil, parsley, rosemary, thyme, oregano, mint, or cilantro after cooking
- Drizzle with balsamic vinegar and olive oil after cooking.
- Add some heat: add a pinch of crushed red pepper flakes after cooking.

- When removing the tomatoes from the air fryer, I recommend you use silicone tipped tongs so you don’t scratch the coating on your air fryer basket.
- Fridge: Store up to 5 days in well sealed container.
- Freezer: For best texture, crush the tomatoes then freeze. Freeze up to 6 months in freezer safe bag/container.

- Use as a pizza topping (would be great over lentil flatbreads with pesto)
- Crush the tomatoes and use them like pasta sauce or tomato sauce.
Common questions
Do I need to deseed the tomatoes?
No, it’s not necessary. I leave the seeds in because they help the tomatoes stay juicy and prevent them from drying out or burning. If you prefer seedless, you can scoop them out after roasting.
Do you have to peel the tomatoes?
No peeling required! Just rinse, dry, and slice before adding them to the air fryer.
Does this make sundried tomatoes?
No, this method roasts the tomatoes, giving them a juicy, caramelized finish. Sun dried tomatoes are made by dehydrating them, which is a different process entirely.
What is the best knife to cut tomatoes?
A serrated knife works best. Tomato knives are also a great, affordable option if you prep tomatoes often.
