Because these are seriously so simple to make, super filling and fun to eat! They are also gluten free, paleoish and don’t require any cooking! Plus, who doesn’t love sushi!!

Do you ever need a meal in like 5 minutes or less? I do, like all the time! And while it’s easy to open a can of tuna (or salmon) and combine it with guacamole, that kind of gets old after awhile! Trust me you are going to love this smoked salmon sushi rice cakes recipe for those days when you just don’t feel like cooking! It’s happens to the best of us!
I absolutely love sushi. But Dave doesn’t (womp womp) So I save my sushi outings for when I go to Charlotte and can grab a bite to eat with my bestie! It’s kind of our thing and it’s so special to me that we can always connect over a giant plate of sushi and wine! This doesn’t mean I don’t get some serious sushi cravings though. I’ve made homemade sushi quite a few times, but it’s harder than it should be, and I always seem to make a giant mess. So I’m always looking for new ways to enjoy my favorite sushi flavors without all the complication. Which is how I came to dream up this recipe!
Honestly, this recipe idea has been written in my “book of recipe ideas” (<– which is actually an excel sheet just in case you were wondering) for quite some time. It started as a smoked salmon sushi bowl, but recently morphed into this idea of using rice cakes instead of rice. It’s kind of like cheating, and I kind of love that! Dave has recently become quite fond of rice cakes, they are super filling, easy on his digestive system and an easy meal when he’s hungry at night. Needless to say, every time I thought about making this recipe, the rice cakes had disappeared!
I finally have all the ingredients and can’t wait to share this recipe with you! These smoked salmon sushi rice cakes require zero cooking. All you need to do is mash half an avocado with wasabi (totally optional) and coconut aminos (or tamari). Spread the avocado mixture over the rice cake, add your veggies and top it with smoked salmon! I sprinkled a little everything bagel seasoning, but sesame seeds would be great too! Drizzle with a little more aminos and add pickled ginger if you are into that kind of thing! Viola – lunch (snack, or dinner) is served!

Smoked Salmon Sushi Rice Cakes
Ingredients
- 2 brown rice cakes
- 1/2 small avocado
- 1 tsp wasabi powder - optional
- 1 tsp coconut aminos - or tamari
- 1/4 cup shredded carrots
- 1/4 cup sliced cucumber
- 4 oz smoked salmon
Instructions
- In a small bowl, smash the avocado and add the wasabi powder and coconut aminos (or tamari) and combine well
- Place 2 rice cakes on a plate, Divide the avocado mixture between the rice cakes.
- Top the rice cakes with shredded carrots, sliced cucumber and smoked salmon
- Top with optional sesame seeds, pickled ginger and additional coconut aminos or tamari

I didn’t have avocado so I used cream cheese with a splash of soy sauce blended. I topped it with pickled ginger, carrot, cucumber, paper thin onion, sesame seeds and then smoked salmon. It was amazing!!!!! Thanks for all the ideas. 😊
