Have you combined dates and nuts or seeds yet? It’s seriously a combination straight out of foodie heaven if you ask me. If you haven’t tried this combination yet, you are missing out. Dates have become quite the popular ingredient, they are naturally sweet and lets be honest, they taste like candy. They are also a great binder in recipes like this and add the structure needed to keep these blueberry energy balls together.
The real star of this recipe though is the lemon. I am going to be honest here, every time before this recipe that I tried to add lemon to a dish, it got lost in the background. The key though is that these don’t have to go into the oven. Since these are a no bake recipe, the lemon flavor doesn’t deteriorate and paired with the sweet dates and vanilla protein powder, the lemon flavor in these blueberry energy balls is just like my favorite lemon poppyseed cake from Starbucks. I may have done a little dance when I was taste testing this recipe.

We found out that Dave has nut and peanut allergies, which have been causing him to have quite a bit of stomach pain and discomfort. I used sunflower seeds in this recipe so that he could enjoy these without any stomach pain. However, if you don’t have any problems with nuts, these would also be great with almonds or cashews. I actually love using sunflower seeds though because they are inexpensive and I love the flavor they add to the end product.
Blueberry Energy Balls Spotlight
Sunflower seeds are a great source of antioxidents. Packed with Vitamin E and selinium, these antioxident rich seeds will help fight off free radicals in the body. They are also full of unsaturated fats that help lower bad cholesterol (LDL) and raise good cholesterol (HDL)! Sunflower seeds are also a great source of plant based protein and folate. Folate is a B vitamin that helps the body produce new red blood cells.
This recipe comes together in about 4 minutes with the use of a food processor. Just blitz together the dates and sunflower seeds, add the protein powder, coconut flour and lemon rind and lemon juice. I have a small food processor that works perfectly for this recipe, and I’ve had it for years and it’s one of favorite gifts from my mom.
Lemon Blueberry Energy Balls
- In food processor process dates. Then add sunflower seeds and process until smooth. Add lemon zest and process again.
- Add protein powder and lemon juice. Pulse to combine
- Add coconut flour and vanilla extract. Process until smooth.
- Add blueberries and pulse Add to a bowl.
- Add in 1 tbs sunflower seeds and 1 tbs slightly crushed blueberries mix and form balls Makes 9-10 balls
