What is delicata squash?
Delicata squash is a winter squash with yellow and green stripes and looks like a large zucchini in shape. Delicata squash has delicate skin and belongs to the same species of summer squash like zucchini.
When is it available?
Delicata squash is typically available from early September through late January.
Where can I buy delicata squash?
Most grocery stores sell in during its peak time, but it can also be found at your local Trader Joe’s or farmer’s market.

How do I pick the right one?
Delicata squash is typically yellow with green stripes. If you notice the yellow is turning a dark orange, the squash may be overly ripe. Also, it’s important that you examine the skin for soft spots! You want to look for a squash that feels heavy for its size (that means it’s got lots of flesh and not too many seeds).
Also, delicata squash is typically sold by the squash at places like Trader Joe’s so I like to find the biggest ones possible!
Why should you buy delicata squash?
Delicata squash is low in calories, is loaded with fiber and vitamins and minerals and has a delicious, sweet, nutty flavor that pairs well with most dishes! It’s easy to cut and easy to prepare.
You can even eat the seeds! No need to throw away the seeds! Simply roast them in the oven with the squash for a perfect salad or soup topping or a healthy snack!
How to make Roasted Delicata Squash:
- Preheat the oven to 450F
- Cut the delicata squash by removing the ends, standing it up on a flat end and cutting straight down the center.
- From here remove the seeds and cut into half-moon shapes, slightly thinner than your pinky finger (See tips below).
- Place a sheet of parchment paper on a baking dish and spray lightly with non-stick spray. Spread the squash out (it’s ok if they overlap a bit). Sprinkle with a pinch of salt and roast at 450F for 20 minutes
- Remove the squash from the oven, use a spatula to gently flip the squash (in big batches) and return to the oven for 5 minutes
- While the squash is finishing, make the maple tahini drizzle by combining the maple syrup, tahini, ground cinnamon, and water.
- Remove the squash from the oven, drizzle with the maple tahini sauce. Top with optional pumpkin seeds or leftover roasted squash seeds.
Tips when making roasted delicata squash:
Wash it! Since you will be eating the skin, it’s important that you wash it before cutting.
Don’t cut too thin, the squash can easily burn if cut too thin. Try to aim for the thickness of your pinky finger. If you do cut the squash thinner, you may need to reduce the cooking time.
How to cook delicata squash in the air fryer:
Spray a little oil and cook it in the air fryer at 375F for about 14 minutes. You will likely have to cook them in batches so you don’t over-crowd the air fryer! Be sure to shake it occasionally during cooking.

How long can you store delicata squash in the fridge?
Cooked delicata squash can be stored for up to 5 days in an airtight container.
You can also wash and cut the delicata squash ahead of time and store the cut delicata squash for up to 3 days in the fridge before baking.
