This simple spiralized squash with roasted red pepper sauce is the perfect summer lunch or dinner recipe. No cooking required! This recipe uses simple ingredients and is so easy to make! Vegan, gluten free, grain free, paleo, whole30 approved!
I have a hard time turning on my stove or oven in the summer. This roasted red pepper sauce over simple spiralized squash has been one of my go to meals this summer. I oven top this dish with hemp seeds for added protein, Omega-3 fatty acids and a contrasting texture. But I’ve been known to serve this with over easy eggs, canned salmon, tuna, and when I’m lucky enough to have it in the house, some freshly cooked shrimp and salmon. YUM! This dish is so versatile and I highly encourage you to add this roasted red pepper sauce to your Sunday night meal prep. You won’t believe how easy it is!
This dish came about during our time cooking for The Healthy Dish Company. I came up with a recipe for roasted red peppers sauce sliders and I would often have a cup or two of leftover roasted red pepper sauce at the end of the night. We also made a ton of zucchini noodles, or zoodles. And i would throw them together in a to-go container and enjoy them the next day. I was in heaven! I secretly couldn’t wait until the next time we made the dish so I could enjoy this again.
I have to admit it took me a good month to start cooking these recipes again after we took a break (and ultimately had to end) The Healthy Dish Company. I was in complete burn out in the kitchen and was coming close to some serious health conditions like adrenal fatigue. The idea of cooking was just too much to handle and I pretty much lived on green smoothies, eggs and chocolate chips. Not pretty but hey I’m here to be totally transparent.
But now it’s been awhile. I have my cooking bug back and now I’m limited because I’ve packed up most of my kitchen in anticipation of our big move to Austin. But not my spiralizer (affiliate link)! And certainly not all of my food processors or blender! Those babies will be out until the last day. I 100% believe that those three items are necessary for anyone who is looking to start cooking healthy cooking and living a more active life!
The spiralizer makes noodles out of vegetables. Seriously guys, pasta like noodles from vegetables. You have to get one if you are switching from a pasta filled life to a more vegetable based life. You will feel full, satisfied and you will be getting in another serving of veggies! What’s not to love!
The blender and food processor is a great way to make sauces and soups out of veggies and other herbs. I highly recommend a good food processor to make things liek this roasted red pepper soup, chimichurri sauce, spinach basil pesto, kale pesto and so much more! High speed blenders are great to make green smoothies and to help process down big batches of butternut squash soup!
I used summer squash in this recipe because it looks more like traditional fetticine noodles, with it’s light yellow color. Zucchini noodles would also be great in this dish, but the green color of the noodles can be intimidating to those who are new to this healthy living lifestyle! Don’t worry, they are both fantastic and they don’t require cooking either – score!

Simple Spiralized Squash with Roasted Red Pepper Sauce
- in a food processor, combine the roasted red pepper, basil, chopped garlic, hemp hearts and salt. Blend until smooth
- Once smooth, add olive oil (streaming in or all at once) and blend. You will notice the consistency changes at this point. If you find your sauce is too thick, add 1-2 tbs. of water, only if needed.
- Spiralize the summer squash.
- Serve each squash with 1/4 of the roasted red pepper sauce. Top with a tablespoon of hemp hearts. Add additional protein sources as you wish!
