Ingredients

  • Chickpeas – I used canned chickpeas to make this recipe super simple You can also make this with dried chickpeas that are cooked then drained of liquid. You cannot make roasted chickpeas in the air fryer with dried chickpeas without cooking them first.
  • Extra virgin olive oil or avocado oil – the olive oil or avocado oil helps to coat the chickpeas so that the spices will stick. I also find that adding oil helps ensure that the chickpeas get golden brown when roasting in the air fryer.
  • Spices: Italian seasoning, salt, garlic powder – these simple spices make these Mediterranean roasted chickpeas so flavorful but easy to make. You can change the flavor by changing out these spices. See ideas below.

How to make air fryer roasted chickpeas

Drain the chickpeas and rinse them well. I like to let them soak in fresh water for a minute to ensure all the canning liquid is removed.

Drain them well using a mesh strainer. The drier the chickpeas, the crispier they will get. Optional: Place the chickpeas on a clean kitchen towel and pat them dry.

Add the chickpeas to a bowl. Add the olive oil and spices. Stir well.

Place chickpeas in the air fryer basket. Cook at 375F for 15 minutes. Stop to shake the basket 2-3 times during the last 7 minutes of roasting.

After 15 minutes, turn off the air fryer but don’t open the basket. Let them sit for 3-5 minutes to continue to dry out.

Enjoy immediately or allow to cool and dry even longer 8-12 hours before storing in an airtight container.

Top tips

  • One can of chickpeas will roast in about 15 minutes in the air fryer. Two cans of chickpeas will roast in 20-21 minutes. I don’t recommend more than 2 cans at once as the air fryer will get overcrowded.
  • Allow the chickpeas sit in the air fryer, closed for 3-5 minutes before opening up the air fryer basket. This really helps to crisp them up as they essentially dehydrate with the residual heat of the air fryer.
  • Be sure to shake the basket 2-3 times during roasting in the air fryer. It’s important that the chickpeas get moved around while roasting, especially if you are making two cans of chickpeas at once.
  • Let the chickpeas cool completely 8-12 hours before putting them in an airtight container.
  • If you find that the chickpeas get soft when storing, you can re-crisp them in the air fryer. Simply cook them at 340F for 4-5 minutes.
  • The best way to test if the chickpeas are done is to bite into one. If they are still soft in the middle, they need 2-3 more minutes.

Common questions

Can you double this recipe?

If you want to make 2 cans of chickpeas in the air fryer at once, you will want to increase the cooking time from 15 minutes to 20-22 minutes (depending on your air fryer).

I do not recommend tripling the recipe, as the air fryer basket will get too crowded.

Can you make roasted chickpeas without oil

The oil helps the spices stick to the chickpeas and also help the chickpeas crisp up and become a golden brown color.

If you don’t want to use oil but still want to add flavor, use 1 tablespoon of tahini to coat the chickpeas in instead of oil.
