Ingredients

fresh corn
about 2 ears of corn
1/2
cup
chopped red peppers
1
tomato
chopped
1/4
cup
chopped red onion
2-4
tbs.
chopped cilantro

juice of limes

tsp.
sea salt
Instructions
Cook the corn first by boiling it in water for 5-6 minutes or cooking on the grill for 10-15 minutes. Allow the corn to cool.
Cut corn from cob, see the post for tips on how to do this without making a mess.
Add the remaining ingredients to the corn. Stir and refrigerate 30 minutes to let flavors combine.
Serve with your favorite Mexican dish or on the side of your favorite dish.
