Protein Cookie Dough
Protein powder cookie dough is the perfect high protein snack or dessert. This gluten free vegan protein cookie dough is ready in just 5 minutes and uses simple ingredients to make the ultimate high protein cookie dough. Form into balls, eat with a spoon or even bake this into protein cookies. Made in just one bowl, no food processor or blender needed.
Add the almond flour, protein powder, tahini, dairy free milk, maple syrup, vanilla extract and salt to a bowl. Stir well to combine.Note that if you use cold liquids right from the fridge the cookie dough will be very thick.
Once the cookie dough mixture is well combined, add the chocolate chips and stir them in. Serve immediately or store in the fridge for 4-5 days in a well sealed container.
Notes
This recipe makes quite a bit of protein cookie dough. If you want to make less, simply divide the recipe ingredients in half. To bake into protein cookies:
Stir in 1 egg and 1 teaspoon of baking powder to the mixture.
Spoon out (I recommend using 1 tablespoon scoop) the batter onto a parchment paper lined baking sheet.
Bake at 350F for 11 minutes. Allow to cool 5 minutes before enjoying.
Top Tips:
Cold liquids (like dairy free milk and maple syrup) can make the tahini seize up, making the dough tough to stir. If you have time, let the liquid ingredients rest on the counter for 10 minutes before pouring into the dough.
Use mini chocolate chips to ensure you get a chocolatey bite in every scoop.
Use a protein powder you enjoy the flavor of. The protein powder really sets the base flavor for this cookie dough.
If you notice the protein cookie dough is too thick, add 1 tablespoon of dairy free milk at a time until it reaches your desired consistency.
If you think the cookie dough is doesn’t have quite enough texture (especially if you are rolling into balls for storage), you can add more almond flour (about 2 tablespoons at a time until it reaches your desired consistency).
