Air fryer roasted zucchini is quick, easy and so simple. Ready in under 15 minutes, this healthy air fryer zucchini is the perfect side dish for breakfast, lunch or dinner. This recipe is vegan, low carb, keto and Whole30 friendly.

Cut zucchini into 1 inch pieces. Cut the top and bottom off the zucchini. Cut the zucchini in half lengthwise, then in half again (4 long strips). Cut the strips down into 1 inch pieces.
Add zucchini to a bowl and add olive oil and spices. Stir well.
Add zucchini to air fryer basket and turn on 400F for 12 minutes. Pause the air fryer during the last 5 minutes to shake the basket 2-3 times.
Serve hot.

Top tips
Cut the zucchini into similar size pieces for even cooking.
Place a parchment paper or silicone liner in the air fryer basket for easy clean up.
The zucchini can slightly overlap in the basket just be sure to shake the basket 2-3 times during cooking.
Exact cooking time will vary based on your air fryer and how much zucchini you put in the basket. The fuller the basket, the longer the cooking time. Start checking the zucchini around 10 minutes.
Other spice combinations
Cajun – replace the dried thyme with 1 teaspoon cajun seasoning
Taco – replace the dried thyme with 1 teaspoon taco seasoning
Italian – replace the dried thyme with 1 teaspoon italian seasoning
Everything bagel – only use half the salt and garlic powder indicated in the recipe and replace dried thyme with 1 tablespoon everything bagel seasoning
Spicy – add 1/8 – ¼ tsp red pepper flakes
Greek – replace the dried thyme with 1 teaspoon italian seasoning and ½ teaspoon dried oregano
Herbs de provence – add 1 teaspoon herbs de provence to the spices listed.
Curry – replace dried thyme with ½ teaspoon curry powder and ½ teaspoon ground cumin.
Smoky – replace dried thyme with ½ teaspoon smoked paprika and ½ teaspoon ground cumin.
Storing leftovers
Fridge: If you do have leftover zucchini, store it in the fridge for up to 4 days. Note: The zucchini really is best hot right out of the air fryer
Reheat roasted zucchini in the air fryer 360F for 4-5 minutes or in the skillet over medium heat with a bit of oil. You can also reheat in the microwave, but the texture may be mushier than the other 2 options.
Freezer: I do not recommend freezing leftover zucchini unless you plan on blending them up in a soup or using in a frittata or soup when defrosted because of how the texture will change.
