Combine the ingredients for the marinade (dijon mustard, coconut aminos, Italian seasoning, oregano, salt, red wine vinegar) in a bowl. Stir well to combine.
½ tablespoon dijon mustard, 1 tablespoon coconut aminos, 1 tablespoon Italian seasoning, ½ teaspoon oregano, ½ teaspoon sea salt, 1.5 tablespoons red wine vinegar
Pour the marinade over the chicken. Let marinade 15 minutes if possible. If you are short on time, skip the marinade time.
1.5 pounds boneless, skinless chicken thighs
Place chicken in air fryer basket in a single layer (don't overlap the chicken). Cook at 375F for 12 minutes.
After 9 minutes (with 3 minutes to go), pause the air fryer and flip the chicken. Continue to cook the last 3 minutes.
Check the chickens internal temperature (165F) at the thickest part of the chicken. Let the chicken rest 4-5 minutes before cutting.

Top tips
Use boneless, skinless chicken thighs if possible. They stay juicy and are very forgiving in the air fryer. If using chicken breast, butterfly it so it cooks through quickly without drying out.
Don’t overcrowd the basket. Air flow is key. Cook in batches if needed so the chicken isn’t overlapping.
Check the internal temperature. Test the thickest part of the thickest piece. You’re looking for at least 165°F.
Watch the cook time. Every air fryer runs a little differently. Start checking around 11 minutes. It may need 2–5 more minutes depending on your machine.
Want to make a larger batch? Cook it in the oven at 400F. Place the chicken in a casserole dish or on a baking sheet and cook for 25 minutes. Check internal temperature (at least 165F) before serving.
Storing leftovers
Fridge: Store leftovers in the fridge for 3-4 days in an airtight container. Reheat in the air fryer 350F for 4-5 minutes or in the microwave 1-1:30.
Freezer: You can freeze leftovers for up to 3 months in a freezer safe bag or container. Defrost overnight in the fridge and reheat the same as you would from the fridge.
