Air fryer diced potatoes are quick and easy and ready in under 30 minutes. Perfect for breakfast, lunch or dinner this healthy air fryer potato cube recipe is budget friendly and also vegan, gluten free, paleo and Whole30.

Start by scrubbing the potatoes and making sure they are dried off before cutting.
Cut the potatoes into cubes. Cut the potato in half from top to bottom so you have a long, oval shape for both. Put the potatoes down on the flat side then cut 1/2 inch logs. Then dice the potatoes by cutting the logs into 1/2 inch cubes.
Add the diced potatoes to a bowl. Drizzle with olive oil and coat in spices. Stir well to coat the potatoes well.
Add the diced potatoes to the air fryer basket. Cook at 400F for 23 minutes.
After 13 minutes (10 minutes remaining) pause the air fryer basket and shake it well. Pause it again 2-3 times in the last 10 minutes to shake again to ensure the potatoes get crispy.
Serve immediately.

Top tips
Be sure to dice the potatoes all the same size so they can cook evenly.
Be sure to shake the basket 3-4 times during cooking to ensure the potatoes are evenly cooked and crispy.
Don't overcrowd the air fryer or the potatoes will steam and never get crispy. Each model of air fryer basket is going to be different. For my Ninja Air Fryer I can make about 1.5 pounds at once.
No need to peel the potatoes before cooking them! However, since you are eating the skin, be sure to rinse the potatoes well before cutting into cubes.
Coat the potatoes with oil before cooking. This helps them get nice and crispy and also helps ensure the spices stick to the outside, so they are well seasoned.
Other spices you could add
Taco – add 1 tablespoon taco seasoning to the seasoning mix.
Cajun – omit the oregano and add 1 tablespoon cajun seasoning to the seasoning mix
Ranch – omit the smoked paprika and oregano. Add 1 tablespoon dried chives, 1 teaspoon dried parsley and ½ teaspoon dried dill.
Curry – omit the smoked paprika and oregano. Add ½ tablespoon curry powder and 1 teaspoon ground cumin.
Italian – omit the smoked paprika, add 1 tablespoon italian seasoning
Greek – omit the smoked paprika, add 1 tablespoon italian seasoning and the juice of half a lemon.
Storing leftovers
Fridge: Store leftover air fryer potato cubes in the fridge for up to 5 days. Note that these will quickly lose their crispy texture and will need to be reheated in the air fryer or on the stove to get a crispy texture back.
Reheat in the air fryer: add to air fryer basket and cook at 390F for 3-5 minutes or until crispy.
Reheat on the stove: cook over medium heat in a skillet with a drizzle of olive oil for 5-8 minutes or until crispy.
Freezer: You can technically store leftover crispy air fryer potato cubes but the texture will not be the same when defrosted. I would only recommend using the defrosted potatoes in frittatas, breakfast casseroles or in tacos or burritos as they will not have the same texture after defrosting.
