Healthy Zucchini Pancakes
Healthy zucchini protein pancakes are perfect for breakfast or breakfast for dinner! These gluten free pancakes are low in carbs, high in protein and low in fat. They are made with wholesome ingredients that will keep you full for hours! Great way to get kids to eat more veggies!
Grate the zucchini and squeeze out as much water as you can. Place aside
Add egg whites a large bowl. Whisk for 1 minute with a fork to get fluffy.
Add greek yogurt and stir. Add protein powder, coconut flour, chia seeds, and cinnamon. Stir to combine.
Add zucchini, vanilla extract and optional hemp hearts and stir to combine.
Add baking powder and stir until all the baking powder is combined.
Preheat griddle or large pan over medium heat.
Divide the batter between 8-9 pancakes. Cook for 5 minutes on one side.
Flip pancakes and cook an additional 3-5 minutes until done. To check if they are done, you can press on the top of the pancakes. If they feel firm all the way through they are done!
This makes 8 pancakes. I usually have 3 for breakfast (after teaching spin) so you may have leftovers if it's just you :)
