- 2 brown rice cakes
- 1/2 small avocado
- 1 tsp wasabi powder - optional
- 1 tsp coconut aminos - or tamari
- 1/4 cup shredded carrots
- 1/4 cup sliced cucumber
- 4 oz smoked salmon
In a small bowl, smash the avocado and add the wasabi powder and coconut aminos (or tamari) and combine well
Place 2 rice cakes on a plate, Divide the avocado mixture between the rice cakes.
Top the rice cakes with shredded carrots, sliced cucumber and smoked salmon
Top with optional sesame seeds, pickled ginger and additional coconut aminos or tamari
