Healthy Carrot Cake Energy Bites
Enjoy the flavors of carrot cake anytime with these simple, healthy no-bake carrot cake energy bites! Raw, vegan, gluten free, paleo, nut free, allergy friendly and super easy to make! Packed with protein, fiber and healthy fats!

Remove the pits from the dates and soak in hot water at least 10 minutes.
Place the softened dates in the food processor with 3 tbs. of the water from soaking.
Pulse until a thick paste forms.
Add sunflower seeds and pulse again until the dates and sunflower seeds have combined and start to break up.
Add the protein powder, chia seeds, coconut flour and mix until well combined.
Add the shredded carrot, cinnamon, vanilla, and ground ginger. Pulse until incorporated.
Pour the contents of the food processor into a large bowl. Mix by hand quickly if needed to ensure that the carrots and spices have been evenly distributed.
Roll out in 1 tablespoon portions by hand. Place on wax paper and refrigerate until cooled slightly 5-10 minutes if possible.
Melt coconut butter in the microwave for 20 seconds or over the stove in a double boiler for a few minutes, just until runny.
Using a fork, drizzle the coconut butter over the carrot cake bites. The coconut butter will harden quickly once placed in the fridge. Place them in the fridge to harden on a flat surface like a cookie sheet lined with wax paper. Once hardened they can be stored together.
Store in an airtight container in the fridge.
