The Best Oat Flour Pumpkin Cookies

– Pumpkin puree – Coconut sugar – Avocado oil (or olive oil or coconut oil) – Oat flour – Pumpkin pie spice – Cinnamon – Baking powder – Chocolate chips – Vanilla extract (optional)

Step 1

Preheat oven to 350F. In a bowl combine the pumpkin puree, coconut sugar, avocado oil and vanilla extract. Stir well.


Step 2

Add oat flour, pumpkin pie spice, cinnamon, baking powder to the pumpkin mixture. Stir well.


Step 3

Add chocolate chips and stir to combine.


Step 4

Use 1 tablespoon cookie scoop to portion out the cookies (15) on a parchment paper lined baking sheet.


Step 5

OPTIONAL: Press down the cookies before baking so they are flat, otherwise they will stay "muffin" like.


Step 6

Bake at 350F for 12 minutes. Allow to cool before removing from baking sheet.
