– Pumpkin puree – Coconut sugar – Almond butter – Almond flour – Oat flour – Pumpkin pie spice – Cinnamon – Salt – Baking powder – Chocolate chips – Vanilla extract (optional)

Step 1

Preheat oven to 350F. In a bowl combine the pumpkin puree, coconut sugar, and almond butter. Stir well.


Step 2

Add almond flour, oat flour, pumpkin pie spice, cinnamon, baking powder and vanilla extract to the pumpkin mixture. Stir well.


Step 3

Add chocolate chips and stir to combine.


Step 4

Use 1 tablespoon cookie scoop to portion out the cookies (15) on a parchment paper lined baking sheet.


Step 5

Press down the cookies before baking so they are flat, otherwise they will stay "muffin" like.


Step 6

Bake at 350F for 11 minutes. Allow to cool before removing from baking sheet.
