– 1 bag frozen riced cauliflower – 1 pound asparagus – 1/2 tbsp avocado oil – 1/4 tsp salt – 1/4 cup roasted red pepper – 2 tbsp red onion – 6 cups arugula

Creamy Tahini Dressing – 1/4 cup tahini – 1/4 cup apple cider vinegar – 1.5 tbsp dijon mustard – 3 tbsp water – 1/2 tsp salt – 1 tsp garlic powder

Remove the woody stems from the asparagus. Chop the asparagus into 1-2 inch pieces.
