Homemade Sweet Potato Tots

Sweet potato tots are easy to make and baked not fried (you can even make them in the air fryer).  The perfect side dish for picky eaters. These healthy sweet potato tots have just 4 ingredients and are gluten free, vegan, Whole30 and paleo friendly!

INGREDIENTS

2 pounds sweet potatoes - about 6 cups once sliced3 tbsp ground flax1/4 cup almond flour1/2 tsp. saltnon-stick spray

Step 1

Peel and slice the sweet potatoes into 1/2 inch thick half moons. Microwave on high for 5 minutes (or steam on the stove).

Add 1/2 of the cooked sweet potatoes to food processor. Pulse until the potatoes resemble rice. Remove the sweet potato rice and repeat with the rest of the potatoes.

Add ground flax, almond flour and salt to sweet potato rice and stir well. Let sit 5 minutes.

Form the sweet potatoes into tots by tightly squeezing them in your hand then shaping with your thumb and pointer finger.

Place the tots on a parchment paper lined baking sheet.

Bake 425F for 15 minutes, flip the tots and bake 10 more minutes.

DIRECTIONS

You can also make these sweet potato tots in the air fryer!  Put about 1/2 of the tots in the air fryer and bake at 375F for 12 minutes.
