Oat flour sugar cookies are so simple, all you need is one bowl and a spoon. Make these into drop cookies or roll the dough out to make cut out cookies.

INGREDIENTS

– Avocado oil – Coconut sugar (or regular sugar) – Dairy free milk – Oat flour – Arrowroot (or tapioca or cornstarch) – Baking powder – Salt – Vanilla extract

Step 1

Preheat oven to 350F. In a large bowl combine the avocado oil and coconut sugar.

Add the oat flour to the sugar mixture. Stir well.

Add the rest of the ingredients to the bowl and stir well. Rest the dough 1-2 minutes.

Scoop out 1 tablespoon servings of dough to make drop cookies or rest the dough 30 minutes to make cookie cut outs.

Flatten the cookies (if you want large round cookies). Leave them rounded for more pillow like cookies.

Bake in a 350F oven for 10 minutes. Allow to cool 10 minutes before handling.
