The Best  Mushroom Stuffed Zucchini


Italian mushroom walnut stuffed zucchini are the perfect meatless meal or healthy side dish. Easy to make and packed with flavor - these taste like pizza!

– Zucchini – Mushrooms – Salt – Dried Thyme – Tomato Paste – Balsamic Vinegar – Coconut aminos (or soy sauce) – Chopped walnuts – Kale, arugula or spinach

Step 1

Cut the zucchini in half, scoop out the seeds with a spoon. Discard the seeds


Step 2

Place zucchini on baking sheet, sprinkle with salt, bake at 400F for 15 minutes.


Step 3

Slice mushrooms, add them to a preheated skillet and cook 4-5 minutes.


Step 4

Add the rest of the ingredients and cook 2-3 minutes.


Step 5

Once zucchini are done baking, stuff with the mushroom mixture then return to oven 5 minutes.
