INGREDIENTS

– Onion – Celery – Carrots – Garlic – Vegetable broth – Water – Chickpeas – Rice (or orzo) – Spices: salt, garlic powder, oregano, bay leaves – Kale – Lemon

Step 1

Finely chop the veggies. Tip: use a mini food processor to quickly chop the veggies.

Add onion to preheated pot and cook 3-4 minutes then add the rest of the veggies and cook 4-5 minutes.

Once the veggies are softened, add the vegetable broth, water, chickpeas, rice and spices. Turn on high heat and bring to boil, then low to simmer 30 minutes.

Once the rice is cooked, turn off heat and add the chopped kale. Stir well.

Zest a lemon and add the zest and juice to the soup. Taste and add the juice of one more lemon if needed.
