INGREDIENTS

Onion & garlicVegetable BrothDiced tomatoesBalsamic vinegarSundried tomatoesItalian seasoningGarlic powderSaltWhite beansGnocchi (GF & Vegan)Baby spinach

Step 1

Preheat a large pot over medium heat and add the chopped onions. After 3 minutes, add the garlic.

Once onions start to caramelize, add 1/2 cup broth and scrape the bottom of the pot.

Add the rest of the vegetable broth, diced tomatoes, spices and sundried tomatoes. Turn the heat up to high, bring to a boil.

Once boiling, add the gnocchi and white beans. Cook 8 minutes.

Turn off the heat, add the baby spinach and stir well. Once spinach is wilted, serve hot.
