Gluten free banana bread muffins are the perfect breakfast or afternoon snack. Tender, moist and so flavorful, these vegan almond flour banana muffins are naturally dairy free, egg free and easy to make! All you need is a fork and a bowl to mix these muffins up!


- 3 large bananas - 2 tbsp. ground chia seeds - 1/4 cup water - 2 tbsp coconut sugar  - 2 cups almond flour - 1/3 cup gluten free flour - 2 tsp. cinnamon - 1 tsp baking powder - 2 tbsp.peanut butter or almond butter - 1/4 cup vegan chocolate chips


Preheat oven to 375F. Add bananas to large bowl and mash with fork.


Add ground chia seeds and water to banana mixture and combine well ensuring no lumps.


Add the rest of the dry ingredients to the banana chia seed mixture. Be sure to stir well to incorporate.


Add peanut butter to the muffin batter and stir well.


Add the chocolate chips to the batter and stir to incorporate.


Add muffin liners and spoon the batter in the muffin pan (makes 12 muffins).


Bake the muffins at 375F for 30 minutes. After baking allow to cool at least 10 minutes (preferably longer).

Drizzle with peanut butter or enjoy plain! Great for breakfast or afternoon snacking!
