INGREDIENTS

Dairy free milkMaple syrupGround flax seedsRolled oatsShredded carrotsCinnamonGround gingerBaking powderPecans (optional)

Dairy free Greek style yogurtMaple syrupCinnamon

Maple Frosting (optional)

Step 1

Grate the carrots using a hand graters or the food processor.

In a large bowl combine the dairy free milk, maple syrup and ground flax.

Add the oats, shredded carrots, spices and baking powder to the bowl.

Chop pecans and add half to the oatmeal. Stir well.

Spray the dish. Add the oats and flatten with spoon. Top with the rest of the pecans.

Bake at 350 for 50 minutes. Take out of oven and let cool at least 10 minutes.

Combine the yogurt, maple syrup and cinnamon together to make the frosting.

Wait to drizzle the frosting over the oatmeal until serving if you plan on making this in advance.
