Air Fryer Sweet Potato Toast

Sweet potato toast in the air fryer is quick, easy and so versatile! Add you favorite toppings for breakfast, lunch or dinner! This healthy recipe is a great alternative to gluten free bread and so budget friendly! Just 1 ingredient and 16 minutes!
Start by slicing the sweet potatoes – first slice off the ends so that you have a flat bottom you can rest the potato on. Then using a very sharp knife slowly cut the potato into ¼ - ½ inch slices. If you take your time you can easily cut the potato slices into the same thickness from top to bottom.
Place the sweet potato slices in the air fryer, but don't overcrowd the basket. The sweet potato slices can slightly overlap but should not be resting on each other. You may need to break this into batches depending on the size of your basket.
Turn the air fryer on 360F for 16 minutes. Pause the air fryer half way through and flip the sweet potato slices.
A really sharp knife is needed to cut large sweet potatoes. Cut the bottom off the potato so you have a sturdy base when cutting the slices. Go slow when you are cutting to help ensure you get even slices.
When cooking the sweet potato slices in the air fryer, be sure to not overcrowd the basket. The potato slices can slightly overlap but should mostly lie flat in the air fryer basket. Many models of air fryers will require you to cook multiple batches if you have a large sweet potato.
If you are making batches of sweet potato toast in the air fryer, know that the second batch will not require as much time to cook since the air fryer will be preheated. You likely only need 14-15 minutes for the subsequent batches once the air fryer is preheated.

Use whatever your favorite sweet potato or yam variety for this recipe. I love using Japanese sweet potatoes (the flesh is white) so they look just like toast.
Air fryer cooking times may need to be adjusted based on your air fryer since they all have slightly different motors and sizes. Because of this you may want to keep an eye on your sweet potato toast in the air fryer during the last 3-4 minutes of cooking the first time you make this to ensure it doesn’t burn.
How to make sweet potato toast in the toasterPut the slices of sweet potato in the toaster and toast (light to medium toasting) for 3-4 cycles. Be careful when removing the sweet potato slices from the toaster as they are fragile and delicate.How to make sweet potato toast in the ovenPreheat the oven to 450F. Once oven is preheated, place sweet potato slices on a baking sheet (lined with parchment for easy clean up) and bake for 20 minutes. After 20 minutes, take out of the oven and flip the sweet potato slices. Return to the oven for 10-15 more minutes.How to freeze sweet potato toast?Cook the sweet potatoes then let them cool completely. Once cooled, transfer the sweet potato toast to a baking sheet lined with parchment paper. Let freeze overnight. Once frozen, transfer to a freezer safe bag or container for up to 2 months with parchment paper between the slices (to ensure they don’t stick together).How to cook frozen sweet potato toastThe day you are ready to eat them, cook the frozen sweet potato toast in the air fryer at 375F for 15 minutes, flipping after 10 minutes in the air fryer.Storing leftoversFridge: Store leftover sweet potato toast in the fridge for up to 4 days.
