Remove the pits from the dates by cutting one side from top to bottom and removing the pit.
Mix together the peanut butter and maple syrup, stirring well
Add 1 pecan piece to each date. Fill with about 1/2 tbsp of the peanut butter maple mixture
Freeze the stuffed dates for at least 10 minutes
Place a sheet of wax paper or silicone liner down for the candies to rest on once they are coated in chocolate.
Add peanut butter to the chocolate chips in a microwave safe bowl.
Melt the dairy free dark chocolate chips in the microwave for 30 seconds. Stir well until fully melted. Microwave again 30 seconds.
Hold the frozen dates with a fork. Using a spoon, drizzle the chocolate over the frozen dates and place on the wax paper.
Place the chocolate covered dates in the fridge until the chocolate hardens. You can store in the fridge or transfer to the freezer.

Storage
Fridge: Store in an airtight container in the fridge for up to 10 days.
Freezer: Freeze in a single layer until frozen solid then transfer to freezer safe bag for up to 3 months. I eat them right out of the freezer - so good!
Substitutions
Peanut butter: you can use whatever nut or seed butter you love. Almond butter, cashew butter, sunflower seed butter or tahini.
Pecan pieces: Use your favorite nut or seed here. Be sure to chop it and evenly distribute the chopped nuts/seeds throughout the dates so you get some good texture and contrast.
