Sweet Potato Tots
Sweet potato tots are the perfect healthy side dish or party food! This super simple recipe only has 4 ingredients and is the perfect comfort food! Naturally vegan, gluten free, paleo, and Whole30 friendly, these tater tots will disappear quickly, so be sure to make extra!
Wash and peel the sweet potatoes. Cut the sweet potatoes in half and then down into 1/2 inch half-moons and add to a microwave safe container or steamer basket on the stove.
Microwave the potatoes on high for 5 minutes or steam for 5 minutes on the stove in a covered steamer basket over simmering water.
Add the sweet potato rounds to the food processor (about 1/2 of the sweet potatoes). Pulse on high until the sweet potatoes resemble rice (about 30 seconds)
Remove the sweet potato rice and put it in a large bowl for mixing. Pulse the rest of the sweet potato rounds in the food processor.
Add the ground flax, almond meal and salt to the sweet potato rice.
Mix the sweet potatoes, ground flax, almond meal and salt together well. Let sit for 2-3 minutes to let the flax start to bind the sweet potatoes.
Add parchment paper to a rimmed cookie sheet. Spray with nonstick spray (avocado oil or olive oil)
Add about 1-1 1/2 tablespoons of mixture to your non-dominant hand. Press the mixture together in your hand to form a cylinder shape while pressing down on the top and the bottom with the pointer finger and thumb of your dominant hand.
Repeat until you have about 32 tots.
Once all the tater tots have been formed, place in oven for 15 minutes.
After 15 minutes, take the tots out of the oven and flip them to the other side. Bake 10 more minutes.
Air Fryer Directions:You can also make these sweet potato tater tots in the air fryer. Instead of putting them in the oven, put about 1/2 of the tots in the air fryer and bake at 375F for 12 minutes. Can you freeze for later?Yes! Allow the tots to cool from cooking then freeze the tots on a wax paper lined baking sheet. Once frozen, add to a freezer safe bag and freeze for up to 2 months.How to reheat after freezing:
Oven: Preheat the oven to 400F and bake for 15-17 minutes until hot.
Airfryer: Bake at 375F for 10 minutes until hot.
Note: if already defrosted they will need even less time in the oven or air fryer.Reheating from the fridge:
Oven: 350F for 7-10 minutes
Microwave: about 1 minute on high
Air fryer: 350F for 5 minutes.
Other seasonings mix in to make different kinds flavors:
Everything bagel: Add 1 tablespoon of everything bagel seasoning
Mexican: Add 1 teaspoon of chili powder, ½ teaspoon cumin, ½ teaspoon garlic powder
BBQ: Add 1 teaspoon paprika, ½ teaspoon onion powder, ¼ teaspoon of ground mustard
Sweet: Add 1 teaspoon cinnamon and 1 tablespoon of coconut sugar
