Raw Chocolate Truffles
Chocolate always sounds good whether it's for workout fuel or to satisfy a craving. These babies certainly satisfy with deep, dark velvety chocolate and a rich creamy center.
Add the coconut flakes and puree until a rough powder.
Add the coconut oil and maple syrup. Blend in a high-speed blender until it turns buttery smooth. This will take up to 10-15 minutes. Scrape the sides down every minute.
Add the rest of the ingredients and blend until smooth.
Taste and see if it is too bittersweet for you. Add more maple syrup if needed.
Transfer to a bowl and add cacao until all the excess oil/syrup is soaked up and mixed in.
Shape small balls with your hands and coat (sugar, hemp seeds, coconut, etc.).
Serve!
*I store these in the refrigerator just to be safe but prefer to eat them at room temperature.
