Pumpkin Spice Maple Sunflower Seeds
Pumpkin Spice Sunflower Seeds are the perfect fall snack! Easy to make and you can easily double or triple the recipe to have some on hand all season long. This recipe is budget friendly, allergy friendly and naturally vegan and gluten free.
In a bowl, combine the maple syrup, pumpkin spice, ground cinnamon, melted coconut oil and pinch of salt. .
Add 1 cup of sunflower seeds and stir well.
Place foil on the baking sheet and spray lightly with coconut oil.
Add the sunflower seeds and spread out into a thin layer.
Bake for 5 minutes.
Allow to cool completely before enjoying!

Top tips:
If you want these pumpkin pie spiced sunflower seeds to be sweet, increase the maple syrup to 2 tablespoons.
Be sure to let these rest a few minutes before enjoying (they will burn your mouth right out of the oven).
Change the flavor by using different spices. You can easily make these savory instead of sweet.
How to roast raw sunflower seeds (shelled)
Preheat the oven to 325F.
Add the sunflower seeds to a rimmed baking sheet.
Spread the sunflower seeds out into a single layer and bake in the oven at 325F for 10 minutes.
After 10 minutes, check the seeds to see if they have started to brown.
Continue to cook for 3-5 more minutes staying very close to the oven and using your nose to detect if the seeds start to smell done.
Substitutions:Coconut oil: use avocado oil or even olive oil in a pinch. Pumpkin pie spice: simply double the cinnamon or use 3/4 tsp. cinnamon, 1/8 tsp ground ginger, 1/8 tsp nutmeg and small pinch cloves.
