Gingerbread Protein Energy Bites
Remove the pits from the dates.
Add the dates to the food processor and process on high for 1 minute, until the mixture resembles caramel.
Add the pecans to the date paste and process on high 1-2 minutes, until the mixture resembles sand
Add the molassas, cinnamon, ground ginger and salt to the date and pecan mixture. Process on high 1 minute until well blended. Will form a ball in the food processor.
Add the protein powder and process on high 30 seconds-1 minute, until a coarse sand like consistency. Scrape down the sides as needed.
Take a small handful from the food processor and press it together in your hand. The mixture should easily form a ball.
Roll 16 equally sized balls from the mixture, using about 1 tablespoon of mixture to form each energy bite.
Store in the refrigerator or immediately cover in chocolate.
To melt the chocolate chips, add the chocolate chips to a microwave safe bowl. Microwave on high 30 seconds.
Remove from microwave and stir. Microwave again 30 seconds.
Remove from microwave and stir again. Should almost be completely melted.
Put back in the microwave and microwave again for 15 seconds. Stir well again
Chocolate will be easy to stir and should be able to drizzle if needed.
Once the chocolate coating is finished, set up a tray with wax paper.
Use a large spoon to add the truffles one at a time to the chocolate coating. Move the gingerbread energy bites around in the chocolate until fully coated.
Remove the truffle from chocolate and place it on the wax paper. Do not touch it again until it has time to set up in the refrigerator.
Place the tray of truffles in the refrigerator to allow the chocolate coating to set. Let them sit in in the fridge for at least 30 minutes
Store these in the fridge for up to a week or freeze for up to a month
