Simple Gluten Free Almond Flour Muffins
These simple gluten free almond flour muffins are light and airy and the perfect compliment to a bowl of soup or your favorite breakfast spread! These muffins are vegan, grain free, gluten free, paleo and can be made with one bowl and a fork, no fancy equipment needed!

Servings: 24 muffins
- 2 tbsp egg replacer See post for substitions
- 2 tbsp ground flax meal
- 1 cup water
- 2/3 cup tigernut flour or gluten free flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/8 tsp salt
- 2 tbsp applesauce or pumpkin puree
Preheat the oven to 400F
Place 24 mini muffin silicone liners or parchment paper liners in a mini muffin tin.
In a large bowl add the water and use a fork to stir in the egg replacer and ground flax meal. Stir well and get out any lumps.
Add the tigernut flour and almond flour and stir well to fully incorporate, removing any lumps
Add the baking powder, salt and applesauce and stir well.
Divide the batter between 24 mini muffins
Bake at 400F for 15 minutes.
Remove from oven and enjoy warm or cold.
