Lemon Artichoke Recipe
This simple lemon artichoke recipe is the perfect weeknight side dish! So easy to prepare and ready in about 10 minutes, this recipe is vegan, gluten free, grain free, paleo and Whole30 approved!

Heat a cast iron skillet over medium heat until hot. Add 1 tbsp olive oil and the frozen artichoke hearts. Cover and cook 5-6 minutes over medium heat.
Once the artichokes are defrosted, remove the lid and add the remaining tablespoon of olive oil, lemon juice, salt and garlic powder. Cook 2-3 minutes.
Before serving stir in the chopped Italian parsley and serve hot.
If you don't have time to defrost the artichoke heats, you just add a few minutes of cooking time to this recipe to ensure the artichokes are cooked all the way through.
These artichokes are great with pesto for dipping or serving.
