  • 1 head of romaine washed and chopped
  • 1/4 English cucumber sliced thin
  • 1/4 red pepper chopped
  • 1/4 yellow pepper chopped
  • 6-10 cherry tomatoes chopped
  • 3-4 pepperoncini peppers chopped
  • 1/2 cup chickpeas drained and washed

Homemade Greek Dressing


For the salad, chop all the ingredients and add them to a salad bowl.


    • In a mason jar with a tight fitting lid, add dressing ingredients and tightly screw on the lid. Shake vigorously for 1 minute until dressing comes together.
