Ingredients

  • 1 1/2 cups fresh corn - about 2 ears of corn
  • 1/2 cup chopped red peppers
  • 1 tomato - chopped
  • 1/4 cup chopped red onion
  • 2-4 tbs. chopped cilantro
  • 2 juice of limes
  • 1/2 tsp. salt

Instructions

  • Cook the corn first by boiling it in water for 5-6 minutes or cooking on the grill for 10-15 minutes. Allow the corn to cool. 
  • Cut corn from cob, see the post for tips on how to do this without making a mess. 
  • Add the remaining ingredients to the corn. Stir and refrigerate 30 minutes to let flavors combine.
  • Serve with your favorite Mexican dish or on the side of your favorite dish.
