Lemon Blueberry Energy Balls

Ingredients

cup
sunflower seeds
Zest of one lemon
1
vanilla vegan protein powder
Lemon juice from one lemon

coconut flour

tsp
vanilla extract

cup
freeze dried blueberries plus a few extra for rolling
Instructions
In food processor process dates. Then add sunflower seeds and process until smooth. Add lemon zest and process again.
Add protein powder and lemon juice. Pulse to combine
Add coconut flour and vanilla extract. Process until smooth.
Add blueberries and pulse Add to a bowl.
Add in 1 tbs sunflower seeds and 1 tbs slightly crushed blueberries mix and form balls Makes 9-10 balls
