Pear Gingerbread Men Cookies
These Gingerbread Men Cookies are full of protein, sweetened naturally, and the fat was replaced with pear and apple sauce. These little men pack an intense ginger flavor!
In a large mixing bowl, combine all dry ingredients.
Add egg whites, applesauce, molasses and chopped pear to dry ingredients. Stir to combine.
Place in refrigerator to chill, 1 hour.
After done chilling, preheat oven 350.
Cut a large sheet of parchment paper and put out over countertop for rolling out dough.
Scrape dough out of bowl and onto parchment. Allow to rest 5 minutes.
Begin rolling out dough to desired thickness. These should be very thin to get a crispy gingerbread man.
Once dough is to desired thickness cut another large sheet of parchment paper or flour the counter with brown rice or oat flour.
Turn over the parchment paper with the dough and lay dough on new surface. Peel off parchment paper from rolling but don't' press into the new surface to much.
Cut as many gingerbread men out as possible. Gather scraps and re-roll using the same method. I reused the same rapprochement paper through making my men, and had to re-roll the dough 3 times.
Transfer gingerbread cut-outs onto a pregreased parchament lined baking sheet. Bake for 9-11 minutes.
Take gingerbread men out of oven and transfer to a cooling rack. Allow to cool fully before decorating.
*To decorate the gingerbread men, melt 1/4 cup white chocolate
late chips in the microwave or on the stove. It took 1 minute on 50% power to melt the chips for me.
Stir the white chococlate to ensure everything is melted.
Transfer melted chocolate to a plastic baggie. Cut the smallest end off the corner of the bag. This is now your piping bag!
Pipe out the decorations you want! Be creative! Dave and I did these and he was being quite silly with his creations.
Place in the fridge for 15-20 minutes to set your chocolates.
