Make the apple filling first by peeling and chopping one large fuji apple. Over medium heat, add apple, spices and sugar. Add 1-2 tbs. water and allow to cook. Once ingredients have been stirred, start making the pancakes.
Combine all ingredients in a large bowl and allow to rest 1 minute.
Add apple filling and distribute evenly on a hot griddle that has been sprayed with non-stick spray (I used coconut oil). This recipe makes 5-6 6-8 inch pancakes.
The batter will be thick and may need your help with spreading out evenly. Add to a and allow to cook 4-5 minutes on medium heat.
Flip pancakes and allow to cook 4 additional minutes. If making the candied walnuts, be sure to start them once the pancakes have been flipped.
