Easy Paleo Artichoke Hummus
This easy paleo artichoke hummus dip is easy to make, has just 7 ingredients and will be ready in less than 10 minutes. Vegan, grain free, gluten free, whole30 and paleo!

- 1 bag frozen artichokes cooked
- 1 lemon
- 3/4 tsp. salt
- 1/2 tsp garlic powder
- 2 cloves garlic
- 3 tbs. water
- 2-3 tbs. chopped parsley
- 3 tbs. tahini
In a large skillet, spray with coconut oil spray and add artichoke hearts. Cook 4-5 minutes over medium high heat. Add juice of 1/2 lemon and 1/4 tsp. salt. Stir and cook 1-2 additional minutes.
Add cooked artichokes to food processor. Add the juice of the remaining 1/2 lemon, the rest of the salt, 2 cloves garlic minced, garlic powder, and water. Blend well.
Scrape down sides and add chopped parsley and hemp hearts or tahini and blend until smooth (scraping down sides again if needed).
Serve cold or at room temperature.
