The Easiest Red Velvet Pancakes
Start your day with a healthy and exciting breakfast with red velvet pancakes! These are gluten free, grain free, paleo friendly and so easy to make! This recipe is so simple, all you need is a blender!
In a high speed blender, add the egg whites and the applesauce. and blend on high for 1 minute until double in volume.
Add the applesauce and blend quickly.
Add the protein powder, coconut flour, cacao powder, coconut milk and apple cider vinegar to the blender and blend on high 1 minute. You will likely need to scrape down the sides of the blender at least once.
Add vanilla extract and baking powder and blend, making sure to scrape down the sides again.
Using a large griddle (set to about 300F) or a large skillet over medium heat, pour the pancake mixture out, making 8 pancakes.
Cook for 4-5 ininutes, flip and cook another 3-4 minutes.
While pancakes are cooking, make the coconut frosting.
Place the milk, chia seeds and maple syrup in a microwave safe dish and microwave about 30 seconds. Add the coconut butter and stir well, allowing the coconut butter to melt into the warm milk. Let sit 2-3 minutes.
To serve, layer pancakes and small layer of frosting. Top with optional coconut flakes, chopped pecans, chocolate chips, etc.
