Your dinner never looked so good! These whole30 sun-dried tomato turkey sliders are the perfect dinner option, ready in under 30 minutes and packed with flavor! Paleo, grain free, gluten free, and allergy friendly. And they are delicious! I promise you won't even miss the bun!

Dave and I used to make sliders similar to this when we ran our healthy catering company, The Healthy Dish, in Charlotte, NC. Clients loved how flavorful they were and we loved how easy they were to make 100 at a time. Yup you read that right. These sun-dried tomato turkey sliders are perfect for meal prep, since you can make a ton of them at once, they all bake up in the oven together and they store well int he fridge for 3-4 days.

The same goes for the sweet potato buns. It takes about the same amount of time to make 2 potatoes or 4, so I always make more and then use the extra sweet potato rounds for quick egg sandwiches in the morning or slather them with homemade roasted cauliflower guacamole for a snack or eat them with buffalo salmon bites with chipotle ranch for a quick lunch or dinner!

The heat here in Austin is almost unbearable, but these sun-dried tomato turkey slider don't take long to cook and could even be made out on the grill! Since they are smaller than regular burgers, they don't take as long to cook so would be a perfect appetizer as well! You could serve these turkey sliders over zoodles with more sundried tomatoes, over spaghetti squash (sauteed with some butter and garlic) or on top of a salad with some homemade balsamic tahini dressing.

I made these in the oven since I was already going to be making the potato buns. They cook in the exact same amount of time and are so simple to make. The trick to making sure these turn out juicy and flavorful is to not over mix the turkey once you add it. I found that if you add the spices to the spinach and sun-dried tomato mixture and mix that well first, you don't have to mix the turkey too much. Also, I learned from Well Fed that adding vinegar to your burgers helps with the texture as well. I always add tomato paste for an added depth of flavor as well.

Turkey Sliders Recipe Tips

Don't forget to squeeze all the liquid from the defrosted spinach or your turkey burgers won't turn out! I microwave just long enough to defrost (about 1:30) then let it sit for a moment so it's not too hot. Then I squeeze out the liquid over the sink, one handful at a time. This is mostly because I hate washing extra dishes (like the fine mesh strainer). But if you are making this in larger batches, the strainer would be a great option!

Ingredients

  • 1 lb. ground turkey
  • 1 cup frozen spinach - defrosted and water squeezed out
  • 1/4 cup chopped sundried tomatoes in oil - oil drained
  • 1/2 tsp. salt
  • 1/2 tsp. Italian Seasoning
  • 1 tbs. tomato paste
  • 1 tbs. balsamic vinegar
  • 2 large sweet poatoes

Instructions

  • Preheat oven to 425F.
  • Place spinach in a large glass bowl and microwave 1:30. Let sit 1 minute, then wring out all the water by squeezing it over the sink through strainer or using your hands. Be careful, it's hot!
  • Chop sundried tomatoes. Add to bowl of drained spinach
  • Add salt, pizza seasoning and herb griller mairinade. Stir well
  • Add ground turkey, tomato paste, balsaimc vinegar and stir well.
  • Use a 1/4 cup measuring spoon, divide out the mixture onto a parchament paper lined baking sheet.
  • Bake for 25 minutes, flipping half way

Sweet potato slider buns:

  • Cut 2 large sweet potatoes into 1/2 inch wide rounds. Place on a baking sheet lined with parchament paper.
  • Bake for 25 minutes, flipping half way.
