– 1 medium onion – 2 medium garlic cloves – 1 head tuscan kale – 1/2 cup vegetable broth – 1 tsp italian seasoning – 1 tsp salt – 1/2 tsp garlic powder – 1/4 cup sundried tomatoes in olive oil – 2 cans white beans – 2.5 cups cooked jasmine rice

Step 1

Saute the onions in a large skillet 3-4 minutes.


Step 2

Remove the stems from the kale and chop the kale leaves


Step 3

Add the chopped kale, salt, seasonings and vegetable broth to the skillet and cook 2-3 minutes.


Step 4

Once kale is wilted, add white beans, cooked rice and sundried tomatoes. Stir and cook 2-4 minutes.


Step 5

Serve hot with your favorite side salad for a simple, healthy meal!
