1/2 medium white onion – 1 bag frozen cauliflower rice – 2 cups cooked green lentils – 1 cup salsa – 1 tbsp. tomato paste – 1 tsp garlic powder – 1 tsp salt – 1 tsp smoked paprika – 1 tsp ground cumin – 1.5 tbsp coconut aminos

Step 1

Preheat a large skillet and spray with olive oil. Add chopped onion.


Step 2

Once onions are cooked, add frozen cauliflower rice. Cook 3-4 minutes


Step 3

Add lentils, salsa, coconut aminos, tomato paste and spices.


Step 4

Stir well and cook 8-10 minutes until cooked through.


– Serve as tacos with red cabbage slaw. – Make into burrito bowls or burritos – Make nachos (with dairy free nacho cheese) – Use as the filling for taco salads (with this vegan French dressing or cilantro lime dressing)
